With Thanksgiving one week away we here at the Zito family wanted to share a few more recipes with you. Hopefully, you can take and use one or more of these to bring to the table for your family this holiday. Broccoli Bake:
- 1-2 bags frozen broccoli (cooked)
- Spread broccoli in pan, cover with sliced cheese (I use Velveeta)
- Cover cheese with crushed (by hand) Town House or Ritz crackers
- Melt 1/4c – 1/2c stick butter and pour over crackers
Bake at 350 degrees for 15 mins
Puffed Pineapple:
Cream together
- 2 sticks butter
- 1 1/2 cup sugar
- 3 eggs
Stir in 1 large can of crushed pineapple add 4 cups unseasoned stuffing crumbs
Bake at 350 for 1 hour
Pumpkin Roll:
- 2/3 cup pumpkin
- 3 Eggs
- 1 cup sugar
- ¾ cup flour
- 1 tsp baking soda
- 1 tsp cinnamon
Filling:
- 8oz cream cheese soften
- 1 cup powdered sugar
- 2 tbsp butter
- 1 tsp vanilla
Directions:
Pre-heat oven to 375 degrees. Line a 15 x 10-inch cookie sheet with wax paper. Combine flour, baking soda, & cinnamon in a bowl. Beat eggs, sugar, and pumpkin until combined. Add in flour mixture. Bake for 13 to 15 min or until cake springs back when touched. Lay out a towel and sprinkle about ½ cup of sugar on it. Turn cake over onto the towel and carefully pull off wax paper. Let cool for about 20min. Meanwhile, combine cream cheese, butter, vanilla, and powdered sugar until smooth. Spread filling on cake and roll. Put in refrigerator for about 1 hour before serving.
